Mettre l\u2019eau \u00e0 bouillir dans une casserole avec le thym et le poisson de roche. Laisser bouillir une heure. Pendant ce temps, pr\u00e9parez un hachis avec les gousses d\u2019ail, que vous rajouterez au bouillon. Faites revenir l\u2019oignon et la tomate et rajoutez les au bouillon. Lorsque le bouillon est pr\u00eat passer \u00e0 travers d\u2019une passoire et r\u00e9server. Ensuite nettoyer la raie, la peler et couper en morceaux que l\u2019on fera frire apr\u00e8s les avoir enfarin\u00e9s. Puis nous ferons frire les pommes de terre dans l\u2019huile utilis\u00e9e pour la friture de la raie. Dans une cocotte en terre, mettre une couche de pommes de terre, la raie et une autre couche de pommes de terre par-dessus. Remettre sur le feu et ajouter un peu de bouillon de poisson sans couvrir. Secouer de temps en temps la cocotte et arroser la raie avec le bouillon pendant qu\u2019elle bout durant 5 minutes. Pour terminer mettre par-dessus l\u2019a\u00efoli, que nous aurons pr\u00e9par\u00e9 auparavant avec la t\u00eate d\u2019ail et d\u2019huile d\u2019olive. Remuer d\u00e9licatement la cocotte et lorsque la pr\u00e9paration commence \u00e0 bouillir, couvrir et retirer du feu.
