{"id":5355,"date":"2021-11-09T17:47:34","date_gmt":"2021-11-09T17:47:34","guid":{"rendered":"https:\/\/visittossa.com\/gastronomia\/la-recepta-del-cim-i-tomba\/"},"modified":"2025-05-06T09:05:48","modified_gmt":"2025-05-06T09:05:48","slug":"la-receta-del-cim-i-tomba","status":"publish","type":"page","link":"https:\/\/visittossa.com\/es\/gastronomia\/la-receta-del-cim-i-tomba\/","title":{"rendered":"La receta del &#8220;cim i tomba&#8221;"},"content":{"rendered":"<section class=\"l-section wpb_row height_large width_full tossaHd with_img\" id=\"hdMd\"><div class=\"l-section-img\" style=\"background-image: url(https:\/\/visittossa.com\/wp-content\/uploads\/2021\/11\/La-recepta-del-cim-i-tomba-hd.jpg);background-repeat: no-repeat;\" data-img-width=\"1500\" data-img-height=\"370\"><\/div><div class=\"l-section-h i-cf\"><div class=\"g-cols vc_row type_default valign_middle\"><div class=\"vc_col-sm-12 wpb_column vc_column_container\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><\/div><\/div><\/div><\/div><\/div><\/section><section class=\"l-section wpb_row height_large\" id=\"dblMd\"><div class=\"l-section-h i-cf\"><div class=\"g-cols vc_row type_default valign_top\"><div class=\"vc_col-sm-6 wpb_column vc_column_container imgCol\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><div class=\"wpb_text_column tltMd\" ><div class=\"wpb_wrapper\"><h2>La receta del &#8220;cim i tomba&#8221;<\/h2>\n<\/div><\/div><div class=\"wpb_text_column txtMd\" ><div class=\"wpb_wrapper\"><p>Con el paso del tiempo, la receta del \u201ccim i tomba\u201d ha ido evolucionando, especialmente desde que se ha llevado a las mesas de los restaurantes, donde cada cocinero lo elabora aportando su interpretaci\u00f3n del plato, pero aqu\u00ed ten\u00e9is las indicaciones b\u00e1sicas para poder hacerlo en casa.<\/p>\n<p>Ingredientes:<\/p>\n<p>1 kg de patatas<br \/>\n1 kg de raya (o rape, o rodaballo)<br \/>\n5 dientes de ajo<br \/>\n1 cebolla<br \/>\n2 tomates<br \/>\naceite de oliva<br \/>\nsal<br \/>\n2 litros de agua<br \/>\n1 brote de tomillo<br \/>\n1 kg de pescado de roca<br \/>\n1 cabeza de ajo<\/p>\n<p>&nbsp;<\/p>\n<p>Preparaci\u00f3n:<\/p>\n<p>En primer lugar prepararemos el caldo de pescado. Ponemos agua a hervir en una olla con la sal, el tomillo y el pescado de roca. Dejaremos que hierva durante una hora. Mientras hierve el caldo de pescado, aprovecharemos para hacer un picadillo con los dientes de ajo. Pondremos el picadillo en la olla donde hierve el caldo de pescado, haremos un sofrito de cebolla y tomate y tambi\u00e9n lo a\u00f1adiremos. Una vez hecho el caldo de pescado, lo colaremos y lo reservaremos aparte. A continuaci\u00f3n cogemos la raya, la pelamos y la cortamos a trozos, la enharinamos y la fre\u00edmos. Con el mismo aceite donde habremos fre\u00eddo la raya fre\u00edmos tambi\u00e9n las patatas. Cogemos una cazuela de barro, ponemos una capa de patatas, la raya y otra capa de patatas encima. Lo ponemos al fuego y echamos un poco del caldo de pescado, sin llegar a cubrirlo. Iremos sacudiendo la cazuela y con una cuchara vamos remojando la raya con el caldo, dej\u00e1ndola hervir durante cinco minutos. Seguidamente echamos el alioli por encima, que habremos preparado con la cabeza de ajo y el aceite de oliva, removeremos nuevamente la cazuela y cuando arranque a hervir, lo tapamos, lo retiramos del
